A South Asian dish but has many fans all around the world. It a very simple yet delicious dish made with smoky eggplant having a beautiful blend of spices. It’s a must try recipe. If you like eggplant then you gonna love this recipe.


Bangan(eggplant) 2 medium size
Onion 2 medium
Tomato 1 ½
Ginger garlic paste 1 tsp
Salt to taste
Chilly powder 1tsp
Coriander powder 2tsp
Turmeric powder 1tsp
Green chillies 2 no.
Mustard Oil 2 sp
Coriander leaves for garnishing.


Step 1 : Switch on the flame and put both eggplant on it. We do so to get a very soothing aroma and smooky flavor.
Let it roast thoroughly on medium flame. Turn occasionally.



Step 2 : Simultaneously you can make the masala. Heat oil in a pan/kadhai and add onion to it. Let them cook till
the time the change colour. Now add ginger galic paste. Mix and cook for another 30 seconds, then add
tomatoes. Followed by adding all dry spices to it.



Cover cook for 1 minute, mash it with your spoon.

Step 3 : Eggplant must be done lets scrape the outer layer of it with the help of a fork or use your hands and then
mash it with the fork.




Step 4 : Add the mashed brinjal to the prepared masala and mix very well so that brinjal is nicely coated with the
masala. Add chooped green chillies and corinader leaves.



Serve hot with chapatti or parathas.
