Ingrediants

Bitter Gourd 4 small size
Onion 4
Ginger Garlic paste 1 tsp
Jeera 1/2 tsp
Salt to taste
Red Chilly powder 1/2tsp
Turmeric powder 1/2 tsp
Dhania powder 1 tsp
Amchur pwd 1 tsp
oil for shallow frying 4 – 5 sp
oil for tadka 3 tsp
Oil for shallow frying 4-5 tsp

Directions

Scrape all bitter gourds well and do not through it we will use some of it in making the stuffing.

Now with the help of a knife make a slit vertically in each karela and take all seeds out. Rub some salt on each bitter gourd and Keep them aside for about 1/2 hour.

Now finely chop onions. Add 3 tsp oil then add jeera and let it splatter and its time to add onions. fry onions till the time they dnt turn golden brown and add 2 spoon scrapped bottle gourd.Then add all spices – turmeric, coriander, Amchur powder.
Let it cook for another 1 minute and switch off the flame. Let it cool a bit.

Now fill all masala inside the bottle gourds and you can tie them with thread so that the masala dont come out during shallow frying or if you can manage it without thread them you may not tie the thread. Now take oil and fry the bottle gourds.

When the colour of bottle gourd turn golden switch off the flame.

Serve with chapati and daal.
