Its winter time and I can not imagine a winter without Carrot Halwa. It is a carrot-based sweet dessert pudding. Carrot Halwa is a very popular north Indian winters desert recipe. It is know by different names like gajar ka halwa, gajrela or gajorer halwa,
Carrots 2 Kg.
Full Fat Milk 1 Ltr.
Cream/ malai ½ cup
Sugar 1 ½ cup
Green cardamom powder/elachi 1 tsp.
Ghee 2-4 sp.
Mixed dry fruits(kaju, pista, badam) ½ cup
Step 1. Take a heavy bottom pan and add grated carrot to it. Occasionally stir it. Carrot will leave water and change colour. Cook for 20 – 30 minutes on medium flame.
Step2: When carrot juice dries up add milk and cream to it. It will take about ½ hour on medium flame to cook it.
Mix all very well and cook.
Step 3. Add sugar when little milk is left in the carrot. You will notice the after adding sugar the halwa misture will leave some water, its due to sugar. Let it cook for another 1 hour on medium flame. Stir occasionally to avoid sticking and burning. Do scrape the sides also.
Step 4. In a tawa or tadka pan roast the dry fruits in ghee. Add roated dry fruits to carrot halwa and mix and let it cook.
When you notice that the Halwa is leaving ghee on the sides then it’s a indication that its time to switch off the flame and enjoy the delicious Halwa.
Garnish with dry fruits and serve hot.
